This entry-level unit standard is for people working in a commercial kitchen who have an understanding of preparation practices and basic cooking techniques. People credited with this unit standard are able to: prepare to cook; and cook and present basic stocks, sauces and soups, in a commercial kitchen.

This Student Assessment (SA) is an assessment for an individual unit standard. The student completes the tasks outlined in the SA. Once an SA has been completed, it must be assessed by a registered assessor.
